With chef Carlos Testino at the helm, Ortega & Huamán and 27tapas open almost simultaneously, both places located
in the new Iberoestar Selection Hotel in Miraflores. Two gastronomic proposals in spaces separated by 18 floors. One
with access to the street and the other with an incredible view of the Costa Verde.
Ortega & Huamán opens very early with breakfast and good coffee, changing the options as the day progresses until
late at night. It offers from pastries to a la carte or buffet menu that invites you to sit down, with clear reminiscences of
Spanish cuisine but fused with the local gastronomic heritage, as is the case of croquettes with cecina, paiche
carpaccio, tiraditos, cebiches, Galician-style octopus combined with Porcón mushrooms and tapioca. Pacific fish and
meat options are added, such as veal ossobuco with saffron rice and suckling pig and slow-cooked bacon. “Ortega is
the green olive born in Mediterranean lands, the protagonist of tapenades or banderillas with pickles and anchovies;
while Huamán is the Peruvian botija olive, essential in the stuffed potato or the cause”, says Testino.
